My New Fave Chicken Salad

Hi all!

Last week I was checking out some beauty blogs as normal when I surprisingly came across a recipe for a chicken salad.


I unfortunately can't remember who's blog it was but I do know it was American and not Slimming World friendly so I've changed it a wee bit.

Ingredients:
Chicken
Grapes
Celery
Lighter than light mayo (1/2 syn per tbsp)
Bag of salad (I use ranch though not the dressing, it contains broccoli stems, carrot, onion and cabbage)





Chop up the grapes, celery and chicken and add to a bowl with desired amount of mayo.

Mix together and leave to chill (this is my preference) for about 20 minutes.

Put ranch salad on plate and top with chicken/celery/grape mix.


Season to taste.

I've actually had this salad 4 days in a row I like it that much! My servings average at 1 syn due to my using 4 tbsp's of mayo.

Week Ending 16th January 2013

Hi all!

I'd initially intended on keeping a daily food diary but decided that was boring, plus I wasn't very good at it. So my new idea for this blog is sharing recipes I've made myself (see previous Slimming World Quiche post) and taking photos of what I've been eating as that's a bit more interesting than just reading.

I wish I could photograph EVERYTHING! But I just don't always remember so what you're gonna see is what I've remembered to do lol.

Beef & Veg Curry (free/superfree)

Turkish Delight Options with Anchor Light Cream (4 syns)

Mushroom Omelette (free/superfree) 

Chilli (free/superfree)

Tuna & Sweetcorn Sandwich (free/HEB/4 syns)

Bacon Bap with Brown Sauce (7.5 syns)

Peppermint Tea (free)

Weetabix & Semi-Skimmed Milk (HEA/HEB)

Chicken, onions, mushrooms & rice (free/superfree)

Cheese & Ham Toastie (free/HEA/HEB)

Slimming World Curry

Hi all!

Got another of my fave recipes for you today.  Slimming World Curry.  I think this is also classified as superspeed but don't quote me on that, I'm not 100% sure.


Ingredients:
Tin of baked beans
Tin of mushy peas
Tin of chopped tomatoes
1-2 tbsp curry powder (to taste)





Meat of choice (I used steak pieces)
Vegetables of choice (I used onion, peppers & mushrooms)

Add beans, peas and tomatoes to a pot with the curry powder and simmer.
Once heated through you can leave the sauce as is or blend it to a smooth consistency (I prefer to blend it).



In a separate pan cook the onions, peppers and mushrooms.
Add this to the sauce.


Cook the meat to taste and add to the sauce.


And there we have it, a quick and easy curry.

Slimming World Quiche

Hi all!

So part of my new year's resolution was to try some new recipes.  So here's todays...

Slimming World Quiche

Ingredients:
3 eggs
300g tub of cottage cheese
Fry light
Few slices of bacon, all fat removed, chopped
1 onion finely chopped
100g mushrooms chopped
Ham

(I used frozen onions and frozen mushrooms because I always have them)

Fry the bacon, mushrooms and onions in the Fry Light until the onion has softened and the  bacon is nearly cooked.
In  a bowl add the cottage cheese and eggs and whisk until blended.
Pour the onion, bacon & mushroom mix into the bowl.
Line an oven-proof baking dish with ham and pour the mixture in.

Bake in the oven at gas mark 6/200C (fan 180C) for 25-30 minutes.

Serve hot immediately or allow to cool for packed lunches.

You can use any kind of fillings you want and if you're using cheese don't forget to count it as a healthy extra a or syns.

This was my first attempt at making quiche and it was a little bit "sloppier" than I imagined but it tasted lovely.  So I'm allowing the rest to cool and I shall have some for lunch tomorrow.

Post Christmas Round Up

Hi all!  And Happy New Year!

So I've been absent for a wee while with Christmas and that, but never fear I'll give you a quick run down of how I've been doing.

Weigh in wise I'm not too sure as I've taken the past 2 weeks as holidays for various reasons, including work related ones.

Food wise - in terms of meals I've been eating mostly slimming world friendly stuff, though I have been out for meals more than normal, add to that my alcohol intake has sky-rocketed (this sounds like I'm a real lush or something but I don't often drink but I've been out a few times and I drink vodka with fizzy apple which is about 7 syns a glass)

Snack wise - the chocolates, sweets and biscuits in this house are going to be the death of me!  I am so weak willed!  They're mostly gone now with the exception of my Violet Creams but in order to savour them as they are difficult to find I only allow myself one a day lol.

Anyway, we went shopping last night and I bought the ingredients to make Slimming World Curry Sauce with Beef and Vegetables, Slimming World Quiche and Slimming World Pea & Ham Soup.  Add these to the Slimming World Chilli's already in my freezer and we're on to a winner!

I didn't do it with the chilli but I will try to add the recipes here as posts.

Sunday 16th December 2012

Hi all!

Well it's another 7am - 3pm shift for me today.  These shifts are notorious for going 1 of 2 ways - 1) me hardly eating at all due to being rather tired and sleep being a main priority or 2) me doing nothing but eat and having the worst munchie head on ever!

Breakfast - no breakfast for me today which I know isn't good but it was a really busy shift and impossible to leave the desk for anything.

Lunch - tuna, sweetcorn & mayo (2) sandwich (heb) with chicken and vegetable soup.

Snack - 2 pears. 4 mandarins. (I really like fruit)

Dinner - we went out for dinner tonight. I had a steak (which was very lean) and rare. Champ (which I didn't actually eat). Pepper sauce (5 approx). And sherry trifle (17)

So all in all for a night out this meal wasn't too had!

Total syns = 24 approx

Saturday 15th December 2012

Hi all!

I'm shattered this morning after a late finish from work (11pm) and an early start (7am), so I def need a reasonable breakfast to get me going.

Breakfast - 1 low fat grilled sausage (1.5), mushrooms (in frylight), 1/4 soda bread (3.5).  Also a big pint of sf orange cordial.



Lunch - vegetable broth

Snack - French fries (5), 4 mandarins

I didn't have dinner this evening due to various activities but I wasn't very hungry.

Snack - 4 mandarins

Total syns = 10
